1 zucchini in chunks
1 yellow summer squash in chunks
1/2 red bell pepper in chunks
1/2 onion diced
1 broccoli head in chunks
1 cup couscous
1 cup water
1 tsp cumin
1 tsp coriander
1 tsp spicy curry
1 tsp red pepper flakes
1 Tbs olive oil
Put all veggies, spices and olive oil in a large skillet or dutch oven.
Stir over heat 5-10 minutes until slightly softened.
Add water and bring to boil.
Add couscous, stir cover and remove from heat for 5 minutes.
Stir, fluff, and serve.
